Scaling Up: Commercial Lessons from Industrial Mushroom Production
Transitioning from home cultivation to commercial-scale production requires a complete rethink of facility design, contamination control, and process flow. Drawing on years of experience managing production at major commercial mushroom facilities, William will cover bulk-substrate processing, environmental-control systems, scaling spawn production, and the operational bottlenecks growers face when scaling sustainably.

Commercial Mushroom Production, From Culture to Scale
William Laird Goss is a mycology specialist and culture researcher at Amycel and Monterey Holdings, with a focus on strain mechanics, substrate optimization, and natural-product extraction. Deep in the fungal world since 2008, his background spans commercial spawn production, liquid-extraction chemistry, and sustainable-materials engineering.
His production experience includes serving as Production Team Lead at MycoWorks and growing for what was long the continent’s largest organic mushroom facility in Morgan Hill. William has previously presented at the Telluride Mushroom Festival, MycoFest, and the International Society for Mushroom Science (IMMC).
